Rushing The SeasonI was used to the first holiday tree showing up in Costco in August at the back of the store and slowly inching its way up towards the front row by early October. However, this year it seems that Halloween has somehow been the all-clear sign for holiday season decorations. Even the stores started putting up holiday trees and decorations by mid-October. I'm sorry but this past weekend when I went shopping, there was no need to be playing holiday music on Veteran's Day weekend! I'm no Scrooge, but whatever happened to Thanksgiving? Surely it's okay to admit you wouldn't mind seeing some inflatable turkeys and Fall decorations before it's tinsel time. In a show of defiance, I did keep my Halloween lights up an extra week to fight back! Anyway... Since I am focusing, like many of you are, on Thanksgiving and not just surviving, but thriving during the holiday season--no matter how early it starts--let's begin this issue with four tips to help you have a Thanksgiving that is not only happy but healthy with my blog post A Healthy Thanksgiving - Yes It's Possible! Need a Healthy Dinner in 15 Minutes? I've Got Your Back! Salmon Veggie Rice Meal Recipe One of the key things I teach my weight loss coaching clients, as well as my healthy eaters who want to stay that way when pressed for time, is that you don’t have to spend hours in the kitchen to make a healthy, delicious meal. Assemble, don't feel you have to cook! Got 15 minutes? You can make this delicious Salmon Veggie Rice Meal! This is one of my favorite meals to have prior to going to do a strength training workout at the gym–feels light in your stomach and packed with heart healthy protein and good carbs. What’s Needed: –1 Wild Alaskan Salmon Burger (Costco sells Trident, a good freezer staple to have on hand) –1 Container from a 2-pack of Minute Rice Brown/Wild Rice or 1/2 package Seeds of Change Quinoa and Brown Rice with garlic –2/3 cup frozen mixed vegetables, add a few frozen broccoli florets if not already part of the mix, another option add some garlic flavored riced cauliflower (Aldi) –1/8 cup dry roasted pumpkin seeds How to Make the Recipe: –Spray pan with olive oil spray, add Salmon Burger and cook over medium heat 5 minutes each side until nice browning occurs –Put frozen vegetables in microwavable bowl with a little water –Pull cover off the top of the Brown and Wild Rice container and put in microwave –2 minutes after the Salmon Burger is flipped to cook the second side, microwave the rice for 1 minute, set aside –After the rice is done, microwave the vegetables for 90 seconds, set aside –When Salmon Burger is done, remove from pan and cut into small, bite-size pieces, drain the vegetables –Scoop the rice out from the container (or the Seeds of Change) onto a plate and sprinkle the pumpkin seeds on top –Add the drained vegetables and salmon burger pieces –Mix together and if necessary, heat the combined plate in the microwave for 20- 30 seconds – Enjoy! Recipe Serves 1. Just 560 calories, 32 grams of protein, 21.5 grams of fat (just 5.5 grams saturated fat), 60 grams of good carbs, 12 grams of fiber Plus, you can use this basic concept to make a variety of dishes–simple, easy, nutritious and delicious!
